Paleo Recipe – Almond Encrusted Snapper

Paleo Recipe – Almond Encrusted Snapper

The following recipe was posted on CrossFit Balboa's website. It sounds great! I am sure any light, flaky fish could be used instead of snapper. If you are not a fan of fish, make the Paleo seasoning and use on other meats.

Two 6 oz red snapper/rock rod filets are needed but you can always increase the recipe if more is wanted.

Create Paleo Seasoning…
garlic powder
dried time
mustard powder
ground cumin
celery seed
onion powder

Almond meal crust….
1 1/4 cups of almond meal
3 tblspns Paleo seasoning
1/4 tspn sea salt
1/4 tspn coarse ground black pepper

1. Take 1 fish filet and rub with extra light olive oil.
2. Firmly pack on almond meal crust
3. Bake at 400 degrees for 8 minutes

Workout of the Day
Push Jerk 3-3-3-3-3 reps

*Post-WOD: work on skills, strength or rowing

    My food log from yesterday:
    Two peices bacon, strawberries, almonds
    Turkey breats, strawberries, almonds
Salad with olive oil/balsamic vinegar, grilled shrimp
I know it’s super boring but it’s what I have at home right now.

I’m always thinking, I can workout 5 or 6 days in a week, that’s what I used to do. But now I think differently. After three days I am beat up and so sore, Thank God for Rest day!! See you tomorrow though.
Great picture Charlie, Wendy caught you in mid air doing those clapping push ups, but I don’t think they were anything to clap about. lol. They were hard to do.
