Coconut Oil

Coconut oil is one of the Paleo fat sources we encourage you to eat. It's not only tasty (and smells good), but also exceptional for cooking/frying, as it has a high heat point. The New York Times recently published a story of the benefits of coconut oil. Check it out HERE.

    No more coconut for us Filipinos! I grew up eating that stuff and I can’t stand the smell of it anymore.

  2. For a treat every now and then, peel a plantain, slice it into chunks and flatten each chunk. Then, add to a hot skillet of coconut oil, flipping after a few minutes.
    The result is a sweet, crisp tostone. It’s delish.
